Pan De Polvo is a traditional Mexican cinnamon shortbread cookie mix. Easy to make at home.
- Mix Dry Ingredients: In a large bowl, whisk together our mix.
- Cut in the Fat: Using your hands or a pastry cutter, thoroughly blend in the lard or shortening until the mixture is crumbly.
- Add the Liquid: Slowly pour in the cooled cinnamon tea (and a splash of vanilla extract, if desired) while kneading. Add finely chopped pecans at this stage if you want a nutty crunch.
- Shape and Bake: Roll the dough out to about \(\frac{1}{4}\)-inch thickness and cut into circles or your preferred shapes. Bake on an ungreased cookie sheet at 350°F for 10 to 15 minutes.
- Coat: While the cookies are still warm, toss them generously in a mixture of ground cinnamon and granulated sugar (or powdered sugar).
